Overnight oats are so simple - and simply delicious. Starting your day with whole grains will fuel you right and keep you going until your next meal. This cinnamon raisin classic is sure to become a staple!
- 1/4 cup Pecans
- 1/2 cup Rolled oats
- 3/4 cup Unsweetened soy/nut/rice milk
- 1 pinch Cinnamon
- 1/2 Banana
- 1 tbsp Raisins
- to taste Maple syrup
1. Submerge the rolled oats and raisins in unsweetened soy/nut/rice milk, using roughly 1.5 times as much liquid to rolled oats.
2. Cover the oatmeal and put it in the fridge overnight. The next morning you will find soft, fresh tasting oats that won't stick to the bottom of the pan or boil over like cooked oats. That's right, NO cooking involved!
3. Mix in the banana, cinnamon and pecans and sweeten lightly to taste with the maple syrup. Enjoy!
Note: No pecans? No problem. Just add in any other nut or seed in it's place!
